Installation / performance / discourse at Clanz

As a restitution from their project stay and collaboration with artistic, activistic and institutional agents in Trieste, NoW organized a dinner with documentation, collected material culture and not at least elements of the vegetation along the way of the water from the Timavo river into town, which they processed into an aesthetic, informative and culinaric table – a performative integration of their multifacetted project in progress.

Aperitivo:

•   Prosecco
•   Kombucha flavoured with fig leaf sirup 

Amuse Gueule: 

•   Wakame algae on crab chips with a topping of roasted sesame 

Starters:

•   Fish-soup without fish — Potatoes, carrots, celery, Nori algae and White-snow fungi drizzled with chili oil
•   Local Bread & flavoured butters — Green butter: chive and loro harvested on the banks of the Timavo river; Red Butter: peppers and fresh chili

Main Course:

•   Conchigliette “allo scoglio” — with spinach-sauce and black kale leaves (entire)
•   Bis of Venere Rice — local "spaccasassi" herb and gorgonzola; walnuts

Desserts:

•   Glazed fruits from the clanz garden
•   Mousse au chocolat with glazed rosemary from the clanz garden
•   Land snails, harvested in the route from Timavo to Capofonte, on a bed of black sugar tapioca balls
